Roasting red bell peppers softens and sweetens their flavor. They’re brilliant on salads, sandwiches, or blended into sauces.

However, they’re rather annoying to prepare. First, you’ve got to line a baking pan with foil (or plan on spending an hour afterward scrubbing the pan clean). Next, you’ve got to wait for the oven to preheat. Once you’ve got the peppers in the oven you better set a timer reminding you to flip those bad boys. And finally, just when you thought you were done— you’ve got to carefully peel them without making a disaster of the flesh— good luck! Now before you opt-out and purchase pre-packaged roasted red bell peppers (which are not nearly as delicious).
I’ve found an easier way!
Air frying red bell peppers takes all the hassle out of the roasting process. Plus, the flavor is spot on! But just in case you don’t have an air fryer, I’ve got you covered with the oven-baked recipe as well.

Roasted Red Bell Pepper Vinaigrette
Yield: 1 cup | Serving Size: 1 Tbsp

INGREDIENTS
- 2 red bell peppers, roasted
- 1/2 shallot, minced
- 1/2 cup extra virgin olive oil
- 1/4 cup champagne vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon Himalayan sea salt
INSTRUCTIONS
- Roast the peppers as instructed below.
- Peel and mince shallot.
- Place all ingredients in a high-speed blender.
- Blend until fully combined (about 30 seconds).
- Store in a glass jar, and keep refrigerated. Saves 3-5 days.
Excellent paired with fresh fish, arugula and heirloom tomatoes.

Roasted Red Bell Pepper [In The Oven]
Yield: 2 peppers | Serving Size: 1 pepper
Calories: 62 | Fat: 4g | Carb: 8g | Protein: 1g | Sugar: 5g | Fiber: 1g
INGREDIENTS
- 2 red bell peppers
- 1 Tablespoon extra virgin olive oil
INSTRUCTIONS
- Preheat oven to 400°.
- Line a baking sheet with aluminum foil.
- Wash bell peppers thoroughly and pat dry.
- Brush peppers with olive oil (or use fingers in place of brush).
- Place peppers on baking sheet and place in oven.
- Bake for 10 minutes.
- Pull peppers from the oven, gently flip and bake for an additional 10 minutes.
- Once blistered, remove from oven and place peppers in a ziplock bag. Seal and allow them to cool.
- Once cooled, peel the skin. Discard the skin and seeds.
Eat immediately or drizzle with olive oil and store in the refrigerator for 3-5 days.

Ingredients
- 2 red bell peppers
- 1 Tablespoon extra virgin olive oil*
Instructions
- Wash peppers thoroughly and pat dry.
- Brush with olive oil (or use fingers in place of a brush).
- Place peppers on fryer tray.
- Cook at 400° for 25 minutes.
- Pull peppers from the tray and seal in a ziplock bag.* Allow them to cool.
- Once cool enough to touch (15-20 minutes), gently peel.
- Discard skin and seeds.
- Consume immediately, or drizzle with olive oil and store in the refrigerator for 3-5 days.
Notes
*The smoke point of olive oil is 410°. However, if you’re concerned you can use avocado oil instead.
*The ziplock bag is not necessary, but it will make the peeling experience much less annoying.
