It’s almost comical that I would jump from last week’s post about my experience with carnivore to a fresh herb VEGAN dipping sauce the following week. The truth is, (cue the confetti) I’m pregnant (which also explains the late post last week— sorry about that). I’m in my first trimester (and I know I’m supposed to wait until my second to make the announcement— but I’m not one for rules— so there it is) and I’ve been seriously struggling with my diet.
Funny thing is, before getting pregnant I always insisted that I’d have the BEST diet throughout my pregnancy so baby would receive optimal nutrition during development. Clearly I hadn’t considered the constant nausea and rampant food aversions.
Meat, believe it or not, is officially off the table. Weird— I conceived this baby on the carnivore diet and am currently repulsed by the thought of eating meat. So until my hormones correct themselves, y’all are stuck with some ketotarian recipes.

How to Make Fresh Herb Citrus Sauce
Honestly, there’s nothing fancy or elaborate about this recipe. It’s as simple as placing all of the ingredients in a food processor and pulsing until coarsely combined. If you don’t own a food processor you could always use a blender—however, the consistency will be more of a puree.
How to Eat Fresh Herb Citrus Sauce
This sauce is fresh and aromatic. It can stand alone as a dipping sauce with keto bread or crackers. You could pair it with fresh vegetables such as cucumbers, cherry tomatoes, and snap peas. Or, you could use it as a marinade for chicken, pork chops or fish.

Description

Ingredients
- 3/4 cup fresh cilantro
- 1/3 cup fresh Italian parsley
- 3 scallions, roughly chopped
- 1 clove garlic, minced
- 1/2 cup avocado or extra virgin olive oil
- 1 Tbsp fresh lemon juice
- 1/2 tablespoon red wine vinegar
- 2 teaspoons fresh dill
- Pinch of sea salt
Instructions
- Wash and strain produce.
- Add all ingredients to a food processor.
- Pulse until coarsely combined.
Notes
Store in an airtight container and place in the refrigerator. Saves for 3-5 days. Best served at room temperature.
