It’s low carb, takes two minutes to prepare, and is wildly satiating. Even better, you likely have all the ingredients in your cupboard to make this happen right now.

Vanilla cake, chocolate cake, or cheesecake— whatever it is you’re craving, the infamous keto mug cake is the quickest (and easiest) way to get you there!
Plus, you really can’t mess it up. To make this delicious chocolate cake, all you’ve got to do is grab a mug from your cupboard and grease it up with a bit of butter (or coconut oil if you’re opting out of dairy). In a separate bowl, whisk together the butter, almond flour, cacao, baking powder, sweetener, vanilla, and egg. Once the mix is well-combined, pour it into the mug and place it in the microwave. 60 seconds later, you’ll have a light and fluffy piece of chocolate cake. From there, all you’ve got to do is top it off with a drizzle of peanut butter and a dollop of whipped cream.
This easy keto mug cake is dangerously delicious. Take my word and make two because I can guarantee you’re not gonna want to share!

Can You Use Unblanched Almonds?
Blanched or unblanched— what’s the difference?
Blanched almond flour mimics white flour. It’s finer and fluffier than unblanched. Alternatively, unblanched almond flour takes on the taste and texture of wheat flour.
I’ve made this mug cake using both blanched and unblanched almonds. Both variations are tasty. Unblanched flour results in a denser, heavier cake— which is why I prefer using blanched almond flour.

Can This Be Made Dairy-Free?
Absolutely!
This recipe can easily be made dairy-free by swapping the butter with coconut oil. As for the whipped cream, you can choose to omit it or swap it with coconut cream. The cake will be just as moist and delicious.

Ingredients
- 1 Tablespoon unsalted, grass-fed butter*
- 3 Tablespoons finely ground, blanched almond flour*
- 1 Tablespoon raw cacao powder
- 2 Tablespoons granulated erythritol*
- 1/2 teaspoon baking powder
- 1/4 teaspoon vanilla
- 1 pasture-raised egg
- 1 Tablespoon peanut butter
- 2 Tablespoons whipped cream*
Instructions
- Place the butter and peanut butter into two separate bowls. Microwave on high until melted (60-90 seconds).
- Once melted, pour a drizzle of butter into the mug and set it aside.
- Place the almond flour, sweetener, egg, baking powder, butter, and vanilla in a small mixing bowl.
- Whisk together until well-combined.
- Pour the mix into the greased mug.
- Microwave the mug on high heat until the cake is light and fluffy (approximately 45-60 seconds)*
- Drizzle the peanut butter over the cake.
- Top with whipped cream.*
Notes
Dairy-free option: swap butter with coconut oil.
I like using finely ground blanched almond flour because it makes a light and fluffy cake. However, unblanched almond flour works as well. In which case, the cake will be a bit denser.
I generally use Swerve granular when making this recipe, though granulated monk fruit works just as well.
Homemade is healthier and tastes better. Admittedly I’ve been using spray. Mom life. 🤷♀️
Everyone’s microwave is different. Overcooking this cake will dry it out. Better to check it at 45 seconds and add more time if need be. Mine turns out perfect at 60 seconds.
Dairy-free option: swap whipped cream with coconut cream.
