Apple + Manchego Salad with Cider Vinaigrette


With a rich nutty flavor and subtle sweetness, THIS is the perfect Spring salad! Enjoy it as a low-carb lunch. Or better yet, pair it with a glass of sparkling rosé and call it brunch.



Apple Cider Vinaigrette 


  • 2 cups of arugula
  • 1/2 honey crisp apple*
  • 3 slices (aprox. 2oz) of manchego cheese 
  • 2 Tablespoons slivered almonds
  • 1/4 red onion
  • Fresh cracked pepper
  • Dash Himalayan sea salt


Apple Cider Vinaigrette 

  1. Place all the ingredients in a mason jar.
  2. Seal the cap and shake vigorously for 30 seconds.*
  3. Ta-da!


  1. Place the arugula in a large mixing bowl and set aside.
  2. Julienne the apple, onion, and cheese.*
  3. Add the apple, onion, cheese, and almonds to the bowl and toss together with the vinaigrette.
  4. Top with fresh ground pepper and a pinch of sea salt.


Granny smith is delicious with this salad as well.

The vinaigrette will naturally separate. Shake before pouring over salad.
