Description
With a rich nutty flavor and subtle sweetness, THIS is the perfect Spring salad! Enjoy it as a low-carb lunch. Or better yet, pair it with a glass of sparkling rosé and call it brunch.
Ingredients
Scale
Apple Cider Vinaigrette
- 2 Tablespoons extra virgin olive oil
- 1 Tablespoon apple cider vinegar
- 1 teaspoon maple syrup
- 1/8 teaspoon Himalayan sea salt
- Fresh cracked pepper
Salad
- 2 cups of arugula
- 1/2 honey crisp apple*
- 3 slices (aprox. 2oz) of manchego cheese
- 2 Tablespoons slivered almonds
- 1/4 red onion
- Fresh cracked pepper
- Dash Himalayan sea salt
Instructions
Apple Cider Vinaigrette
- Place all the ingredients in a mason jar.
- Seal the cap and shake vigorously for 30 seconds.*
- Ta-da!
Salad
- Place the arugula in a large mixing bowl and set aside.
- Julienne the apple, onion, and cheese.*
- Add the apple, onion, cheese, and almonds to the bowl and toss together with the vinaigrette.
- Top with fresh ground pepper and a pinch of sea salt.
Notes
Granny smith is delicious with this salad as well.
The vinaigrette will naturally separate. Shake before pouring over salad.
‘Julienne’ is a method of cutting vegetables into thin strips.
